Seasoning! Well, at least that is what MawMaw used to call it. It’s actually just a cured piece of meat. This particular piece came from Smileys at Nashville Farmer’s Market. They display their custom smoked slabs of yum over on the side wall where their scales are. Next time you go shopping for greens, ask them to help you pick out the most perfect piece. People have been using “seasoning” in their cooking as long as there has been fire. In most recent years, it has been given a bad rap. Folks want to blame all kinds of health related conditions on “seasoning.” It is not the seasoning that is the problem. It is the amount and frequency of use that one might find issue. I have learned to add a few small pieces chopped fine in a hot pan of olive oil before adding my second layer of flavor. My second layer is almost always onion. The route I go from there varies dependent upon the dish. Oh, and please, please get rid of all that fake crap you may have in your refrigerator. If you can’t have the real thing, just don’t have it! Life is way too short not to be seasoned properly!
